Good Saturday morning! It has been such a gloomy and wet week here in Atlanta but I accomplished a lot. I was able to finish a few projects and stay on top of my #NaBloPoMo (National Blog Post Month, the month of November where I am aiming to blog EVERY single day of the month)!!! So far so good.
As you working folks know, cooking breakfast during the week is a difficult task. I try to leave home an hour before to account for the distance, and the possible and unpredictable traffic (which I usually don’t have, thank God) and I give myself an hour and fifteen minutes to shower and dress, walk the dog and feed her.
And because I usually get my best sleep right before my alarm goes off, I don’t want to shave another thirty minutes off my sleep to make breakfast. Sucks huh? But I’m being honest, don’t shoot me.
So this Saturday, because I can’t tell you the last time I cooked breakfast for myself or my husband, I decided to do so. Luckily I did (and usually do keep grocers in the house) so we had a nice variety of choices.
I started with bell peppers and onions because I like them in my eggs, no brainer. Then I decided to toss a few waffles in the over, along with some Hillshore Farms beef hot links! Hmmm…. I toyed with the idea of grits and at the last minute I decided to make some and add cheese- all grits deserve cheese, right? And voila! Breakfast is served……. As soon as he wakes up!
Well I added his and I don’t think he’ll mind- but I’ll ask him for future reference.
